๐ INGREDIENTS
Salmon:
โข 4 salmon fillets
โข 1/2 tsp smoked paprika
โข 1/2 tsp salt
โข 1/4 tsp black pepper
โข 2 tbsp olive oil
Creamy Spinach Orzo:
โข 2 tbsp olive oil
โข 1 medium yellow onion (chopped)
โข 4 garlic cloves (minced)
โข 1/2 tsp Italian seasoning
โข 1 cup orzo (uncooked)
โข 2 cups chicken stock
โข 1/2 cup heavy cream
โข 1/2 cup roasted red bell peppers (chopped)
โข 1/2 cup Parmesan (freshly grated)
โข 4 oz fresh spinach
โข 1 tbsp lemon juice
๐ฅ STEPS
1. Season the Salmon
Pat salmon dry with paper towels.
Season with smoked paprika, salt & black pepper.
2. Sear the Salmon
Heat skillet 2โ3 min on medium-high.
Add olive oil.
Place salmon skin-side up.
Sear 3โ4 min, flip, cook 2โ3 min.
Remove and set aside.
3. Cook the Aromatics
In the same skillet, add olive oil + onion.
Sautรฉ 2โ3 min until translucent.
Add garlic + Italian seasoning, cook 30โ60 sec.
4. Toast the Orzo
Add uncooked orzo.
Toast 1โ2 minutes.
Pour chicken stock.
Bring to a boil, reduce heat, simmer 6โ10 min, stirring occasionally, until orzo is tender.
5. Make It Creamy
Add heavy cream, roasted red peppers, Parmesan, spinach & lemon juice.
Stir until spinach wilts and sauce becomes creamy.
6. Return Salmon to the Pan
Place salmon back on top of the orzo.
Warm through 1โ2 minutes.
Finish with fresh basil & cracked pepper.
