Salmon:

โ€ข 1 medium yellow onion (chopped)

โ€ข 4 garlic cloves (minced)

โ€ข 1/2 tsp Italian seasoning

โ€ข 1 cup orzo (uncooked)

โ€ข 2 cups chicken stock

โ€ข 1/2 cup heavy cream

โ€ข 1/2 cup roasted red bell peppers (chopped)

โ€ข 1/2 cup Parmesan (freshly grated)

โ€ข 4 oz fresh spinach

โ€ข 1 tbsp lemon juice

1. Season the Salmon

Pat salmon dry with paper towels.

Season with smoked paprika, salt & black pepper.

2. Sear the Salmon

Heat skillet 2โ€“3 min on medium-high.

Add olive oil.

Place salmon skin-side up.

Sear 3โ€“4 min, flip, cook 2โ€“3 min.

Remove and set aside.

3. Cook the Aromatics

In the same skillet, add olive oil + onion.

Sautรฉ 2โ€“3 min until translucent.

Add garlic + Italian seasoning, cook 30โ€“60 sec.

4. Toast the Orzo

Add uncooked orzo.

Toast 1โ€“2 minutes.

Pour chicken stock.

Bring to a boil, reduce heat, simmer 6โ€“10 min, stirring occasionally, until orzo is tender.

5. Make It Creamy

Add heavy cream, roasted red peppers, Parmesan, spinach & lemon juice.

Stir until spinach wilts and sauce becomes creamy.

6. Return Salmon to the Pan

Place salmon back on top of the orzo.

Warm through 1โ€“2 minutes.

Finish with fresh basil & cracked pepper.
