Ingredients

For the Chicken

  • 2 chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon lemon juice

For the Salad

  • 1 large avocado, diced

  • 1 cup cherry tomatoes, halved

  • ¼ cup fresh cilantro, chopped

  • 1 cup lettuce or mixed greens (optional)

For the Dressing

  • 2 tablespoons olive oil

  • 1 tablespoon fresh lime juice

  • 1 teaspoon honey

  • ½ teaspoon Dijon mustard

  • Salt and pepper to taste


Instructions

1. Prepare & Cook the Chicken

Rub the chicken breasts with olive oil, garlic powder, paprika, salt, pepper, and lemon juice.
Grill or pan-cook on medium heat for 6–7 minutes per side until fully cooked and golden brown.
Let rest for 5 minutes, then slice.

2. Prepare the Salad

Combine avocado, cherry tomatoes, cilantro, and greens (if using) in a large bowl.

3. Make the Dressing

Whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper until smooth.

4. Assemble

Place the sliced chicken on top of the salad.
Drizzle the dressing over it.
Toss gently and serve immediately.


Notes

  • Replace chicken with grilled shrimp for a lighter version.

  • Add corn or cucumber for extra crunch.

  • Best served fresh, right after mixing.
