1 cup cottage cheese

1/2 cup diced bell peppers

1/2 cup spinach

1/4 cup shredded cheese

Instructions

Whisk the eggs in a bowl, then mix in cottage cheese, salt, and black pepper.

Heat olive oil in a non-stick pan over medium heat.

Add diced bell peppers and cook for 2–3 minutes.

Add spinach and let it wilt.

Pour the egg–cottage cheese mixture into the pan and gently scramble until cooked to your preferred texture.
