For the Toast

• 2 slices whole-grain or sourdough bread

• 1 ripe avocado

• Salt & pepper

• Squeeze of lemon (optional)

Eggs

• 2 eggs (fried or over-easy)

• 1 tsp butter or olive oil

Toppings

• 2–4 slices smoked salmon

• Fresh parsley or dill

• Drizzle of olive oil

• Optional: red pepper flakes

1️⃣ Prep the Avocado

• Mash avocado with salt, pepper, and lemon juice if desired.

• Spread evenly on toasted bread slices.

• Heat butter/oil in a skillet.
