โข 1 cup baby potatoes, halved
โข 1 tbsp olive oil
โข ยฝ tsp garlic powder
โข Salt & pepper
โข ยฝ tbsp fresh herbs (parsley or dill)
ย For the Avocado
โข ยฝ ripe avocado, sliced

ย Roast the Potatoes
Preheat oven to 400ยฐF (200ยฐC).
Toss potatoes with olive oil, garlic powder, salt & pepper.
Roast 25โ30 min until golden and crispy.
ย Cook the Chicken & Veggies
Heat olive oil in a skillet over medium heat.
Add diced chicken + salt, pepper, paprika.
Cook 5โ6 min until browned.
Add garlic, broccoli & bell peppers; sautรฉ 4โ5 min more until tender.
ย Prep the Avocado
Slice the avocado and season lightly with salt & pepper.
ย Assemble the Plate
Serve crispy potatoes next to the chicken & veggies.
