๐Ÿ“ INGREDIENTS

For the meatballs:

โ€ข 250g ground beef (or beef/pork mix)

โ€ข 1/2 small onion, finely chopped

โ€ข 1 garlic clove, minced

โ€ข 1 egg

โ€ข Salt & pepper to taste

โ€ข 1 tbsp fresh parsley, chopped

โ€ข 2 tbsp breadcrumbs

โ€ข 1 tsp olive oil (for frying)

For the bowl:

โ€ข 1 cup long-grain white rice

โ€ข 1 red bell pepper, sliced

โ€ข 1 small zucchini, sliced

โ€ข 1 small sweet potato, cubed

โ€ข Olive oil, salt, pepper (for roasting)

โ€ข Chopped parsley (garnish)

For the creamy garlic sauce:

โ€ข 1 garlic clove, minced

โ€ข 1 tbsp butter

โ€ข 1 tbsp flour

โ€ข 3/4 cup milk

โ€ข Salt & pepper

โ€ข Optional: 1 tbsp grated Parmesan

๐Ÿฅ„ STEPS (WHATSAPP STYLE)

1. Cook the Rice

Prepare rice according to package instructions. Fluff and keep warm.

2. Roast the Vegetables

Preheat oven to 200ยฐC (390ยฐF).

Toss zucchini, sweet potato & red pepper with olive oil, salt & pepper.

Roast 20โ€“25 minutes, turning once.

3. Prepare the Meatballs

Mix all meatball ingredients in a bowl.

Form 8 small meatballs.

Fry in a skillet 8โ€“10 minutes until browned and cooked through.

4. Make the Creamy Garlic Sauce

Melt butter in a saucepan.

Stir in flour to make a roux.

Slowly whisk in milk.

Add garlic, salt & pepper.

Simmer 3โ€“5 minutes until creamy.

Add Parmesan if desired.

5. Assemble the Bowl

Add rice to a bowl.

Place meatballs on top and spoon over garlic sauce.

Add roasted vegetables on the side.

Finish with fresh parsley.
