• 4 large russet potatoes, peeled & cubed
• ½ lb bacon, chopped
• ½ lb breakfast or Italian sausage, crumbled
• 1 small onion, finely chopped
• 1 cup shredded cheddar cheese
• ¼ cup sour cream
• 2 tbsp butter
• ¼ cup milk
• Salt & pepper, to taste
• Boil potatoes in salted water until fork-tender (10–12 min).
• Mash with butter, milk, sour cream, salt & pepper.
• Set aside.
• In a skillet, cook bacon until crispy.
• Remove & set aside.
• In the same pan, cook sausage + onions until browned and cooked through.
• In a large bowl, combine mashed potatoes, sausage mixture, half the bacon, and half the cheddar.
• Mix gently.
• Line a loaf pan with parchment or grease it well.
• Press the mixture inside and top with remaining cheddar + bacon.
• Bake at 375°F (190°C) for 25–30 minutes, until golden and bubbling.
• Let rest 10 minutes before slicing.
• Garnish with parsley.
