โ€ข 1 lb carrots, peeled & trimmed

โ€ข 2 tbsp olive oil

โ€ข Salt & black pepper

โ€ข 1 cup ricotta cheese

โ€ข 1 tbsp honey

โ€ข 1/2 tsp chili flakes or hot honey

โ€ข 1 tsp lemon zest

1. Roast the Carrots
