๐ INGREDIENTS
โข 1 lb carrots, peeled & trimmed
โข 2 tbsp olive oil
โข Salt & black pepper
โข 1 cup ricotta cheese
โข 1 tbsp honey
โข 1/2 tsp chili flakes or hot honey
โข 1 tsp lemon zest
โข 1 tbsp lemon juice
โข Fresh thyme or parsley

1. Roast the Carrots
Preheat oven to 400ยฐF (200ยฐC).
Toss carrots with olive oil, salt & pepper.
Roast 25โ30 minutes, flipping halfway.
