โข 1 cup + 3 tbsp bittersweet (60%) chocolate chips
โข 2 large eggs
โข Flaky sea salt (for topping)

Heat oven to 350ยฐF (175ยฐC). Lightly grease an 8ร8 inch pan with olive oil.

In a small bowl, whisk cocoa powder with baking soda.

Add chopped beets, sugar, and vanilla to a food processor.
Pulse until the beets are purรฉed but not liquid. Scrape the sides if needed.

In a microwave-safe bowl, combine 1 cup chocolate chips + 2 tbsp olive oil.
Heat in 15-second intervals (up to 75 sec), stirring until fully melted.

Add melted chocolate to the beet mixture and blend until smooth.
Add eggs and blend again.
Add dry ingredients and blend until just combined.

Pour batter into the pan and spread evenly.
Sprinkle the remaining 3 tbsp chocolate chips on top.

The brownies should be puffed on top but still fudgy inside.
