- 1β2 c Canola oil or enough oil to fill the pan up by an inch
- 1β2 c refried beans
- 12-14 small flour tortillas
- 3β4 c red enchilada sauce (divided)
- 3β4 c Cheddar cheese, hand shredded
- 3β4 c Monterey jack cheese, hand shredded
- Sour cream, freshly chopped parsley and any other toppings (optional)

First, make the ground beef according to the directions on the taco seasoning packets and set it aside.

Youβre going to use 2 packets for one pound of beef for extra flavor.

Now, heat the oil in a large skillet and fry the tortillas on both sides until theyβre lightly crisped.
