Easy Cowboy Breakfast Casserole — Hearty, Cheesy & Comfort Favorite

This cheesy cowboy breakfast casserole is loaded with seasoned beef, fluffy eggs, potatoes, and melted cheese. Perfect for breakfast, brunch, or even dinner!

Ingredients

  • 6 eggs
  • 2 cups cooked potatoes (diced or hash browns)
  • 500 g ground beef
  • 1 small onion, diced
  • 1 cup bell pepper, diced (any color)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup milk
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1 tbsp olive oil or butter
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat your oven to 180°C (350°F) and lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat. Add the diced onion and bell pepper, then sauté for 3–4 minutes until softened.
  3. Add the ground beef and cook until browned. Break it apart while cooking. Drain any excess grease.
  4. Season the beef mixture with garlic powder, salt, black pepper, and smoked paprika. Stir well.
  5. Spread the cooked potatoes evenly in the prepared baking dish.
  6. Add the beef mixture over the potatoes.
  7. In a large bowl, whisk together the eggs, milk, and sour cream until smooth.
  8. Pour the egg mixture evenly over the casserole.
  9. Sprinkle cheddar and mozzarella cheese generously on top.
  10. Bake for 35–40 minutes or until the eggs are set and the cheese is golden and bubbly.
  11. Let it rest for 5 minutes before slicing.
  12. Garnish with chopped parsley and serve warm.
