This cheesy cowboy breakfast casserole is loaded with seasoned beef, fluffy eggs, potatoes, and melted cheese. Perfect for breakfast, brunch, or even dinner!
Ingredients
- 6 eggs
- 2 cups cooked potatoes (diced or hash browns)
- 500 g ground beef
- 1 small onion, diced
- 1 cup bell pepper, diced (any color)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup milk
- 1/2 cup sour cream
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 1 tbsp olive oil or butter
- Chopped parsley for garnish (optional)
Instructions
- Preheat your oven to 180°C (350°F) and lightly grease a baking dish.
- Heat olive oil in a skillet over medium heat. Add the diced onion and bell pepper, then sauté for 3–4 minutes until softened.
- Add the ground beef and cook until browned. Break it apart while cooking. Drain any excess grease.
- Season the beef mixture with garlic powder, salt, black pepper, and smoked paprika. Stir well.
- Spread the cooked potatoes evenly in the prepared baking dish.
- Add the beef mixture over the potatoes.
- In a large bowl, whisk together the eggs, milk, and sour cream until smooth.
- Pour the egg mixture evenly over the casserole.
- Sprinkle cheddar and mozzarella cheese generously on top.
- Bake for 35–40 minutes or until the eggs are set and the cheese is golden and bubbly.
- Let it rest for 5 minutes before slicing.
- Garnish with chopped parsley and serve warm.
