Churma Laddu Recipe (No Sugar, Less Ghee)

A soft, healthy, jaggery-sweetened ladoo made with wheat flour and minimal ghee.

Ingredients

  • Wheat flour – 1 cup
  • Semolina – 1/4 cup
  • Besan – 1/4 cup
  • Salt – a pinch
  • Cardamom powder – a pinch
  • Ghee – 2 tbsp + 1 tbsp + 2–3 tbsp
  • Water – 1/2 cup + 2 tbsp
  • Chopped nuts – 1/4 cup
  • Jaggery – 1/2 cup

Instructions

  1. In a mixing bowl, add wheat flour, semolina, besan, salt, cardamom powder, and 2 tbsp ghee.
  2. Mix everything well until the mixture becomes slightly crumbly.
  3. Add 1/2 cup water gradually and knead into a firm dough.
  4. Knead the dough for 2 minutes.
  5. Shape the dough into small elongated pieces using your fingers.
  6. Let the pieces rest for 10 minutes.
  7. Heat oil on medium flame.
  8. Fry the dough pieces until golden brown.
  9. Remove them from the oil and let them cool completely.
  10. Crumble the fried pieces with your hands.
  11. Transfer the crumbs to a grinder and grind into a coarse powder.
  12. Heat 1 tbsp ghee in a pan.
  13. Add chopped nuts and roast for 2 minutes. Set aside.
  14. In another pan, add jaggery and 2 tbsp water.
  15. Cook for 2 minutes until the jaggery melts into a smooth syrup.
  16. Add 2–3 tbsp ghee to the jaggery syrup for better binding.
  17. Pour the hot syrup into the ground flour mixture.
  18. Add the roasted nuts and mix well.
  19. While the mixture is still warm, shape it into ladoos.
  20. Let them cool slightly, then serve or store in an airtight container.
