🥗 Greek Salad with Greens

A fresh, crunchy Greek-inspired salad combining leafy greens, juicy tomatoes, cucumber, Kalamata olives, feta, and a simple oregano vinaigrette.

Ingredients
For the salad
- 4 cups mixed greens, such as romaine, arugula, spinach, or spring mix
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced into half-moons
- ½ red onion, thinly sliced
- ½ cup Kalamata olives, pitted
- ½ cup feta cheese, crumbled
- ½ cup sliced red or green bell pepper, optional
For the dressing
- ¼ cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1 garlic clove, finely minced
- ½ teaspoon Dijon mustard, optional
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
1. Make the dressing
In a small bowl or jar, combine the olive oil, red wine vinegar, oregano, garlic, Dijon mustard, salt, and black pepper. Whisk vigorously or shake until well combined.
2. Prepare the vegetables
Wash and thoroughly dry the greens. Halve the cherry tomatoes, slice the cucumber into half-moons, and thinly slice the red onion and bell pepper.
3. Assemble the salad
Place the mixed greens in a large salad bowl. Add the tomatoes, cucumber, red onion, Kalamata olives, and bell pepper. Sprinkle the crumbled feta over the top.
4. Dress the salad
Just before serving, drizzle the dressing over the salad. Toss gently until the vegetables and greens are lightly coated.
5. Serve
Taste and adjust with additional salt, pepper, oregano, or a splash of red wine vinegar if needed. Serve immediately.
Chef’s Tips
For a milder onion flavor, soak the sliced red onion in cold water for about 10 minutes, then drain well. Keep the dressing separate until serving so the greens stay crisp. For a more traditional Greek flavor, use good-quality feta and Kalamata olives.
For a heartier meal, add grilled chicken, chickpeas, tuna, or warm pita bread on the side.
Storage: Undressed salad can be refrigerated in an airtight container for about 1–2 days. Store the dressing separately and shake well before using.
