Air Fryer Gammon Joint with Pineapple & Honey Mustard Glaze
Juicy, sweet-savory, and beautifully caramelized, this air fryer gammon joint is easy to make and packed with flavor. Perfect for a Sunday dinner or a special midweek meal.
Ingredients
Gammon & Sides
1 kg gammon joint
2 cups Brussels sprouts (frozen or fresh)
Pineapple rings or chunks (fresh or canned)
Honey Mustard Glaze
3 tbsp honey
2 tbsp wholegrain or Dijon mustard
2 tbsp brown sugar
1β2 tbsp honey rum (or dark rum, optional)
Optional: pinch of black pepper or chili flakes
Instructions

Preheat the Air Fryer
Preheat to 180Β°C (356Β°F). -
Cook the Gammon (First Side)
Place the gammon joint into the air fryer basket.
Cook at 180Β°C for 40 minutes. -
Prepare the Glaze
In a small bowl, mix honey, mustard, brown sugar, and rum until smooth. -
Flip & Glaze
Carefully turn the gammon over.
Brush generously with the glaze.
Add pineapple pieces on top. -
Add the Sprouts
If using frozen sprouts, microwave them for 3 minutes first.
Place them around the gammon in the basket. -
Final Cook
Air fry for another 15β20 minutes, until the glaze is sticky and caramelized and the gammon is cooked through. -
Rest & Serve
Remove from the air fryer and let rest 5β10 minutes before slicing.
Serve with pineapple, sprouts, and extra glaze from the basket.
Cooking Tips
β’ If the gammon browns too quickly, loosely cover with foil
β’ For crispier edges, increase temperature to 190Β°C for the last 5 minutes
β’ Taste glaze before brushingβadjust sweetness or mustard to preference
