Ingredients
Dough
- 1 cup glutinous rice flour
- 1 tbsp all-purpose flour
- 1/2 tsp salt
- 1/2 cup boiling water
Filling
- 1/4 cup brown sugar
- 1/4 cup crushed peanuts
For cooking
- 1 to 2 tbsp oil or butter
Instructions
1. Prepare the filling
In a small bowl, mix:
- brown sugar
- crushed peanuts
Set aside.
2. Make the mochi dough
In a mixing bowl:
- Combine glutinous rice flour, all-purpose flour, and salt.
- Slowly pour in the boiling water while stirring with a spoon or chopsticks.
- Once slightly cool, knead with your hands until smooth and soft.
If the dough feels:
- too dry β add a little warm water
- too sticky β add a little glutinous rice flour
Cover and let rest for 10 minutes.
3. Shape the pancakes
- Divide dough into 6β8 equal balls.
- Flatten each ball into a small disc.
- Place about 1 tsp peanut filling in the center.
- Pinch edges tightly to seal.
- Gently flatten into thick pancake shapes.
4. Cook
- Heat a lightly oiled non-stick pan over medium-low heat.
- Place pancakes in the pan.
- Cook about 3β4 minutes per side until:
- golden brown
- slightly crispy outside
- chewy inside
Press gently while cooking for even browning.
5. Serve
Top with extra crushed peanuts or sesame seeds if desired.
Best served warm while the center is soft and gooey.
Tips
- Use glutinous rice flour, not regular rice flour.
- Medium-low heat is important so the inside cooks properly.
- You can also fill them with:
- red bean paste
- sesame sugar
- Nutella
- peanut butter
