Cheesy Beef & Rice Casserole

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 2 cups shredded cheddar cheese
  • Fresh parsley, for garnish (optional)

Instructions

1. Cook the beef

  1. Preheat oven to 350Β°F (175Β°C).
  2. In a large skillet over medium heat, cook the ground beef until browned.
  3. Add diced onion and garlic and cook for 2–3 minutes until softened.
  4. Drain excess grease if needed.

2. Prepare the mixture

Add to the skillet:

  • uncooked rice
  • beef broth
  • cream of mushroom soup
  • sour cream
  • Worcestershire sauce
  • Italian seasoning
  • salt and pepper

Mix well until combined.


3. Bake

  1. Transfer mixture to a greased casserole dish.
  2. Cover tightly with foil.
  3. Bake for 40–45 minutes or until rice is tender.

4. Add the cheese

  1. Remove foil.
  2. Sprinkle shredded cheddar cheese evenly on top.
  3. Return to oven uncovered for 5–10 minutes until cheese is melted and bubbly.

5. Serve

Garnish with fresh parsley if desired and serve warm.

Perfect with garlic bread or a simple salad.


Tips

  • You can add mushrooms, bell peppers, or corn for extra flavor.
  • Swap cheddar with mozzarella or Monterey Jack.
  • Leftovers taste even better the next day.
