Pepperoni Pizza Quesadillas

Ingredients

Vegetable Filling
1 teaspoon olive oil or butter
¼ cup yellow onion, finely diced
¼ to ½ cup bell peppers, diced
½ teaspoon Italian seasoning
½ teaspoon dried basil
Salt and black pepper to taste

Quesadilla Assembly
8 medium flour tortillas (8-inch)
½ to 1 cup marinara or pizza sauce
1 cup freshly grated mozzarella cheese
4 to 6 oz sliced pepperoni


Instructions

Heat the olive oil or butter in a skillet over medium-high heat. Add the diced onion and bell peppers, then season with Italian seasoning, basil, salt, and pepper. Sauté for 3 to 4 minutes until the vegetables are soft and fragrant. Remove from heat and set aside.

Lay out four tortillas on a flat surface and spread an even layer of marinara or pizza sauce on each, leaving a small border around the edges. Evenly distribute the sautéed vegetables, pepperoni slices, and mozzarella cheese over the sauced tortillas.

Top each filled tortilla with another tortilla and gently press down. Heat the skillet over medium heat and place one quesadilla in the pan. Cook for 2 to 3 minutes until the bottom is golden and crispy.

Carefully flip and cook the other side for another 2 to 3 minutes, until golden and the cheese is fully melted. Repeat with the remaining quesadillas.

Let the quesadillas rest for one minute, then slice into wedges and serve hot.
