Ingredients
1 tablespoon olive oil
1 lb lean ground beef (or ground turkey)
1 medium onion, chopped
2 cloves garlic, minced (or ½ teaspoon garlic powder)
1 teaspoon dried Italian seasoning
Salt and freshly ground black pepper, to taste
1½ lb potatoes (Yukon Gold or red), cut into ½-inch cubes
1 can (15 oz) diced tomatoes, undrained
1 can (15 oz) sweet corn, drained
½ cup beef broth (or vegetable broth)
½ cup shredded cheddar cheese, optional
Instructions
Preheat the oven to 375°F (190°C). Heat olive oil in a large oven-safe skillet or baking dish over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
Add the chopped onion and garlic to the beef and cook for about 5 minutes, until softened. Season with Italian seasoning, salt, and pepper.
Evenly spread the cubed potatoes over the beef mixture. Pour the diced tomatoes (with their juice), corn, and beef broth over the top.
Cover tightly with foil and bake for 35 to 40 minutes, or until the potatoes are tender.
If using cheese, uncover during the last 5–10 minutes, sprinkle cheddar on top, and return to the oven until melted and bubbly.
Let rest for a few minutes before serving. Spoon generous portions onto plates and enjoy this hearty one-pan meal.
