Fresh Veggie Egg Breakfast Tacos

Light, colorful, and packed with protein. These veggie-loaded breakfast tacos are ready in minutes and perfect for a healthy, low-carb start to the day.

Ingredients

• 2 small corn tortillas
• 2 large eggs
• 2 tbsp Greek yogurt
• ½ cucumber, sliced
• 2 small bell peppers (any color), thinly sliced
• 1 tsp sesame seeds (optional)
• 1 tsp black sesame seeds
• 1 pinch smoked paprika (optional)
• Salt & pepper, to taste

Instructions

1. Prep the Veggies
Slice the cucumbers and bell peppers. Set them aside.
Sprinkle sesame seeds for extra crunch.

2. Scramble the Eggs
In a skillet over medium heat, scramble the eggs.
Season with salt and pepper.

3. Warm the Tortillas
Heat the tortillas in a pan or microwave for 10–15 seconds.

4. Assemble
Place scrambled eggs on each tortilla.
Add sliced veggies.
Top with Greek yogurt and smoked paprika if using.

5. Serve & Enjoy
